Baked Pumpkin  Gratin


  1. 500 grams of pumpkin
  2. 50 grams of cornflakes
  3. 40 grams of breadcrumbs
  4. 1 sprig of fresh rosemary
  5. to taste grated parmesan cheese
  6. salt to taste
  7. pepper to taste
  8. to taste extra virgin olive oil

The first thing to do to prepare baked pumpkin au gratin is to clean it, eliminating seeds and internal filaments. Remove the external peel and reduce the pulp obtained by cutting slices that are all approximately the same thickness, equal to 1 cm.

Pour the cornflakes into a blender and operate the blades, continuing until you obtain a coarse mixture.  Mix the cornflakes, breadcrumbs, cheese, spices or aromatic herbs, and salt and pepper in a bowl. Dip the pumpkin in the olive oil, beat it lightly to eliminate excess liquid and then pass it through the mixture.

Baked Pumpkin Chips


  1. 500 grams of already-cleaned pumpkin 
  2. 30 grams of 00 flour
  3. salt to taste
  4. a sprig of rosemary

Clean the pumpkin and eliminate seeds and fibers. Cut it into 4-5 millimeters thick cuts and eliminate the strip. Dig the pumpkin cuts in the flour, shaking off the overabundance so a thin layer remains. Put the pumpkin cuts on a baking plate covered with baking paper without covering them.

Season them with salt, rosemary and additional virgin olive oil. Cook the pumpkin in a preheated static broiler at 200° for 20-25 minutes. Then, once cooked, check the pumpkin cuts: if they are not yet signed, you can cook them for another 5-10 minutes, being mindful so as not to allow them to be consumed.
