Homemade Ice Cream: Recipe For How To Make Ice Cream

Ice cream is a delicious cold dessert typical of pastry-making recognized throughout the world! It is a preparation based on milk, sugar, and cream,  with or without eggs, which, through the freezing process, takes on the typical irresistible creamy “ice cream” consistency!

Accompanied by all the practical step-by-step advice to create in a short time, without effort, both with and without an ice cream maker, an exquisite, healthy, and genuine homemade ice cream! In many different flavors! Just like the one at the ice cream shop!

The recipe is very easy and super quick—so simple that even children can do it! It is a revisitation of the classic homemade vanilla ice cream without an ice cream maker. Over time, I have experimented with many different flavors! So, I thought I’d create a single article where I could collect all the valuable information on how to make ice cream! With this base, you can make a creamy and delicious ice cream without an ice cream maker, mixing everything in a bowl in 3 minutes and leaving it in the freezer without turning. 

Constantly, and after a few hours, it will be ready to taste! If, however, you have the appropriate tool, you can make ice cream with an ice cream maker, adding all the ingredients into the jug, turning it on, and letting it gel! In short, very easy! Based on your tastes, you can make fruit ice cream,  chocolate ice cream, coffee ice cream, yogurt ice cream, or get a classic neutral cream flavor! I added all the variations in the ingredients and the process! 

Finally, you can serve it in a cone, in a cup, or a glass and decorate the ice cream as you prefer! With a tuft of chocolate cream, chocolate chips, biscuits, fresh fruit, dulce de leche, sauces, or icings, smarties! Ice Cream Recipe

  1. Preparation:10 minutes
  2. Cooking: 0 minutes 
  3. Total: 10 minutes
  4. Ingredients: quantity of approximately 800 g of product (each flavor)

Basic Vanilla Flavor:

  1. 500 g of already sweetened whipping cream, such as to-do (or fresh liquid cream + 1 or 2 tablespoons of icing sugar, which you can omit if you want it less sweet). Cold from the fridge
  2. 400 g of condensed milk
  3. 2 tablespoons of liquid vanilla extract (or the seeds of 1 berry or 1 sachet of vanillin) + 2 tablespoons of Grand Marnier or Rum

Fruit Ice Cream:

  1. 800 g of fresh fruit, weighed clean and without waste (strawberries, raspberries, blueberries, pineapple)
  2. 500 g of already sweetened whipping cream, such as to-do (or fresh liquid cream + 1 or 2 tablespoons of icing sugar, which you can omit if you want it less sweet). Cold from the fridge
  3. 170 ml of condensed milk
  4. 2 tablespoons of strawberry liqueur (or limoncello, rum, or any other liqueur you have available at home)

Chocolate:

  1. 400 g of already sweetened whipping cream (or fresh liquid cream + 1 or 2 tablespoons of icing sugar, which you can omit if you want it less sweet) cold from the fridge
  2. 320 g of condensed milk
  3. 65 g of bitter cocoa powder (to be increased up to 85 g for a darker taste)
  4. 2 tablespoons vanilla extract (or + 2 tablespoons Gran Marnier or Rum)
  5. dark chocolate flakes, pralines (optional)

Coffee :

  1. 500 g of already sweetened whipping cream, such as to-do (or fresh liquid cream + 1 or 2 tablespoons of icing sugar, which you can omit if you want it less sweet). Cold from the fridge
  2. 180 g of condensed milk
  3. 6 teaspoons of instant coffee

Yogurt:

  1. 500 g of creamy plain or fruit yogurt
  2. 200 ml of whipping cream, such as Hoplà (or fresh liquid cream + 1 tablespoon of icing sugar), cold from the fridge
  3. 170 g of condensed milk
  4. 2 tablespoons vanilla extract (or 2 tablespoons liqueur to taste)

How To Make Condensed Milk

This ingredient is essential for making easy ice cream and avoiding eggs, thickeners, glucose, powdered cream, and other unobtainable and expensive ingredients! You can buy it in supermarkets in the coffee and jam section or on Amazon in a can or tube. If you can’t find it, you can prepare it at home in this way: Place 370g of whole milk in a saucepan on the heat, together with 250g of icing sugar, 35g of butter, and 1 sachet of vanilla. 

Bring everything to a boil and stir constantly over low heat for about 20 minutes. At first, it will swell, and then it will become more solid. Stir constantly until the mixture has transformed into a fluid and smooth cream. Leave to cool in the saucepan, stirring occasionally and placing cling film in contact. You can only use it when it is freezing and fluid! Move to a glass container and store in the cooler.

How To Make Ice Cream

Hand-crafted frozen ice cream without a frozen ice cream producer:

  1. Mix the vanilla and the cold condensed milk; add the cream, whipped to stiff peaks.
  2. Mix from bottom to top so as not to dismantle the mixture.
  3. Transfer into a 30-cm-thick cake mold or airtight container.
  4. Cover with aluminum foil or cling film and keep in the freezer for at least 3 hours; take out a few minutes before serving!
  5. Here’s your homemade ice cream, ready!
  6. You can make excellent ice cream with an ice cream maker following the same procedure: add the frothy and already mixed mixture to the ice cream maker, turn it on, and wait for the necessary gelling time according to your tool!
  7. Finally, if you add 100 g of chocolate chips after 20–30 minutes of cooling in the freezer, you will obtain Stracciatella ice cream.

Storage

You can leave it in the freezer for about 3 months, so you can have it ready throughout spring and summer!
