The Autumn Recipes For Pumpkin

Baked Pumpkin

Ingredients

  1. 800 gr of pumpkin
  2. 250 gr of mozzarella
  3. Two cloves of garlic
  4. Rosemary
  5. mint
  6. thyme
  7. 30 gr of extra virgin olive oil
  8. end of salt

Method

To start, peel the pumpkin, remove the seeds and internal filaments and cut it into slices using a sharp knife. Then, finely chop two cloves of garlic and aromatic herbs, add a few tablespoons of extra virgin olive oil, and mix everything well. Arrange the pumpkin slices in a baking tray lined with parchment paper, add a pinch of salt and pour over the sauce made with the aromatic herbs, garlic, and oil. Bake in a preheated oven at a temperature of 180 ° C for about 15 minutes or, in any case, until the pumpkin is soft. After this time, take the pan out of the oven and cover the pumpkin slices with thin slices of mozzarella

At this point, return the pan to the oven for another 5 minutes. The mozzarella should melt before you can serve the baked pumpkin to the table. A variation of the recipe can be given to the addition of breadcrumbs for a “gratin” effect. Add it to the sauce made with the oil and aromatic herbs, and sprinkle each slice of pumpkin on it. Put in the oven at 180 ° C for 30 minutes. For the last 5 minutes of cooking, activate the grill function to obtain a golden crust on the surface.

Pumpkin (pulp) 225 g

Butter 150 g

Brown sugar 100 g

Honey 90 g

Medium Eggs 1

How To Make Pumpkin Muffins

To prepare the muffins, peel and wash it, remove the peel and seeds, then cut it into slices about 2-3 cm thick. Wrap the pumpkin with two sheets of aluminum foil, forming a “foil,” and put it in the oven to cook for 1 hour at 200 °. When the pumpkin has softened, please remove it from the oven, open the foil and let it cool. Meanwhile, beat the butter until it becomes creamy, using the leaf of a planetary mixer or the whips of a mixer. 

Continuing to beat, add the brown sugar, honey (or molasses), the squashed pumpkin, and finally, the egg. When all the ingredients have blended, turn off the mixer and set everything aside to reach a creamy consistency. Sift the flour with the baking soda, add the salt and spices, and mix everything well with a spoon in a bowl. At this point, add the powders to the dough in the mixer and continue to mix for a few minutes. 

The dough is ready. All that remains is to put it in the appropriate muffin molds: put a paper cup inside each muffin mold, and fill a pastry bag with a smooth nozzle with the pumpkin mixture. Now distribute the mixture evenly in the molds and bake everything in a preheated oven at 200 ° for 15-20 minutes.

Storage

Keep the pumpkin muffins for 3-4 days under a glass bell or in an airtight container, placed in a cool and dry place.
