  • Remove the stems from the piparras peppers and slice them into half-centimetre rounds. Beat the eggs and season them with a pinch of salt per egg.
  • When the pan is hot, add a drizzle of olive oil and the sliced garlic. Sauté until it begins to brown. Once the browning happens, turn up the heat slightly and add the tomato.
  • Add salt and sauté everything for 2 minutes. Add the egg and stir until cooked to your liking (more or less set). If the heat is too high, turn it down.
  • When the scramble is ready, we serve it.
  • Once the dish is ready, add the piparras peppers on top, a touch of freshly ground pepper, and a drizzle of excellent extra virgin olive oil.

One of our favourite, yet easiest, dishes to prepare with seasonal vegetables is Vegetable Flower with Zucchini and Sweet Potatoes. This rustic dish involves cutting thin strips of zucchini and sweet potato and then placing them in a similar dish.

  • 2 zucchini
  • 1 sweet potato
  • 1 onion
  • 100 g of fried tomato
  • 1 cayenne pepper or hot pepper to taste
